I'm using Shaw Secure and it's worked perfectly fine for the last few years I've had it but now it keeps saying that my virus and scanning definitions are out of date (7 days old). I clicked the "check for updates" button but it just tells me everything's up to date when it isn't.

It's free if you have Shaw High Speed. In other words, it's the full version.

Have you checked online if everyone is having this problem?

If not everyone is having it, than it would generally be a problem with the program itself.
However, if it says no new updates are found, I would infer that there are no new updates, and that it's just a bug that is saying there are new updates.
This happens a lot in programs, and learning that it's a free program makes the chances of such bug greater.
