So it kills itself and becomes a baby?

Yes pretty much it incinerates itself, but because it is closely associated with fire / the sun it becomes reborn and depending on which folklore book you read it either becomes a young baby version of itself or a completely new baby phoenix.  ;D either way still cool to me.

My favorite fantasy creature is this elephant creature from the Lord of the Rings movie.

"Mûmakil are huge creatures resembling oversized elephants originating from within the jungle of Far Harad and were often used in battle by the Haradrim. That's in my top 10 list of fantasy creatures :). They are very beatiful and yeah i agree its pretty cool how it gets reborn every 100-1000 years.
