.xcf is the format saved so that further edits can be accomplished in the future. It saves all layers so that the creator can re-open gimp and mess around with the signature if he or she feels necessary. I usually save both a .xcf and a .jpeg (.jpeg for posting; .xcf incase I need to re-edit something).
